Peanut Butter Apple-Stuffed Pancakes



INGREDIENTS

Pancake dough:

  1. 1 cup pancake mix
  2. 1 egg
  3. 1/3 cup + 1 1/2 tablespoons milk


Apple slices:

  1. 1 apple
  2. Peanut butter
  3. 2 tablespoons butter


Toppings:

  1. Vanilla ice cream
  2. Caramel sauce
  3. Mint


INSTRUCTIONS

  1. In a medium bowl, combine pancake dough ingredients.
  2. Slice apple into thin rounds and remove the core. Spread peanut butter on an apple slice, and sandwich it with another apple slice.
  3. Dip the apple sandwich into the pancake dough, turning to coat well. Repeat with remaining apple sandwiches.
  4. In a medium skillet, heat butter over medium heat. Cook pancake-coated apples until golden brown on both sides.
  5. Transfer pancakes to a plate and top with vanilla ice cream and caramel sauce.
